Tamarind Pickle Imli Achar
Tamarind Pickle (Imli Achar) is a tangy, spicy Indian pickle made from tamarind pulp, spices, and oil. It has a sweet, sour, and spicy flavor and is often eaten with rice, roti, paratha, or snacks.
Jaggery (gur) or sugar – 150 grams (adjust to taste)
Red chili powder – 1–2 teaspoons
Roasted cumin powder – 1 teaspoon
Soak tamarind in warm water for 30–60 minutes.
Mash and strain it to remove seeds and fibers.
Heat mustard oil in a pan and add mustard seeds and hing.
Add tamarind pulp and cook for a few minutes.
Add jaggery, salt, chili powder, cumin powder, fennel powder, and ginger powder.
Cook on low heat until the mixture becomes thick like a pickle.
Let it cool completely and store it in a clean, dry glass jar.
