Gajar Ka Halwa is a classic Indian dessert made with fresh carrots, milk, sugar, and ghee. It is especially popular during the winter season and is often served at festivals and family gatherings. This simple recipe serves 4–5 people.

Ingredients

1 kg fresh carrots, peeled and grated

1 liter full-fat milk

150–200 g sugar (adjust to taste)

3–4 tablespoons ghee (clarified butter)

100g khoya (morning), optional

10–12 cashews, chopped

10–12 almonds, chopped

1 tablespoon raisins

4–5 green cardamom pods, powdered

Instructions

Step 1: Prepare the Carrots

Wash, peel, and grate the carrots using a grater.

Step 2: Cook with Milk

Add the grated carrots and milk to a heavy-bottomed pan. Cook over medium heat, stirring occasionally until the milk is mostly absorbed.

Step 3: Add Sugar

Stir in the sugar. The mixture will become slightly watery again as the sugar melts. Continue cooking until the liquid evaporates.

Step 4: Add Ghee

Mix in the ghee and cook for another 8–10 minutes, stirring frequently until the halwa becomes rich and aromatic.

Step 5: Add Khoya

If using khoya, crumble it into the pan and mix well. Cook for another 5 minutes.

Step 6: Add Dry Fruits

Stir in the chopped cashews, almonds, raisins, and cardamom powder. Mix everything thoroughly.

Step 7: Serve

Serve the Gajar Ka Halwa warm. You can also chill it and enjoy it cold. Garnish with extra nuts or pistachios for a festive touch.

Tips

Use fresh red carrots for the best flavor and color.

Full-fat milk gives the halwa a creamy texture.

Cook on low to medium heat for a richer taste.

Add a few strands of saffron for extra aroma and flavor.
